DRP Single Origin Panama Deborah Nirvana
Panamanian Deborah Geisha has arrived as a 7th anniversary coffee. Nirvana's selection begins with harvesting fully ripe cherries. Harvested cherries are placed in hermetically sealed tanks with the pulp intact. The inside of the tank is periodically purged with nitrogen gas to drive out oxygen to create an anaerobic environment, and fermentation proceeds for over 50 hours while observing pH and temperature. Once fermentation is complete, the coffee is dried in shaded greenhouses where temperature, heat and humidity are controlled.
The taste gives you a strong sense of various flavors such as rum, plum, marmalade, and tropical fruits.
Although the flavor is strong, the taste is well-balanced, easy to drink, and a wonderful coffee that gives you a moving experience.
Medium grind when using EK43, grind 8, amount of flour 13g
