The lot I'm going to introduce this time is a crop made by Mr. Mikael Jasin, his 2021 Indonesian barista champion, together with Saeed. Mikael Jasin takes samples of harvested cherries to local universities to identify yeasts and microorganisms that should be added during fermentation. After the main harvest, ripe cherries are placed in plastic tanks and sprayed with the specified yeast. After that, the cherries are slowly fermented until they reach the specified Ph value, and after fermentation they are slowly dried until the moisture content of the cherries reaches 11%. After drying, the cherry is rested for about a month and stored to enhance the flavor. Finally, the shell is removed and a world-class coffee is created.
